This is the only dairy-derived product on our entire menu, and for good reason. In Ayurvedic cooking and practices, it is believed that the constitution of ghee, when cooking with Ayurvedic or medicinal spices, has a better ability than other cooking oils and fats to allow the nutritional aspect of the spice to better penetrate the deepest tissues and fibers of the body. The cooking process of ghee naturally removes the dairy solids, leaving the fats, so it also makes ghee much more of a friendly product for those with lactose-intolerance. Padma practices eating vegan much of the time, and is 100% dairy-free (for lactose intolerance, primarily), and the only "dairy" derived product she utilizes is her home-processed ghee, which pairs nicely when cooking with her Ayurvedic spices! Not recommended for those with a dairy allergy, which is different from intolerance.
